INGREDIENTS FOR 2 SERVINGS

2 steaks

1 c. spinach, chopped

1 tbsp. olive oil

2 tbsps. red onions, diced

2 tbsps. feta cheese, crumbled

2 tbsps. panko breadcrumbs

1 tbsp. diced sun-dried tomato

Salt and pepper

COOKING TIME: 20 MINUTES

METHOD

Preheat grill to medium-high heat.

Use a skillet to sauté the onions in the olive oil for 5 minutes.

Add the remaining ingredients, except the steaks, and stir for 2 minutes. Take off the stove and let sit.

Grill the steaks to the desired doneness.

Top each steak with the spinach mix. Cook in the broiler until the top turns brown.
